The Journey
Originally from Portugal, Dalio spent his early career traveling the world before landing in New York City. Over 15 years, he honed his skills under the tutelage of Iconic Restaurateur Giorgio DeLuca and renowned chefs, including Iron Chef Geoffrey Zakarian and James Beard Award Winner Chef Todd English.
After owning bars and restaurants in NYC and consulting for groups such as Bubba Gump Shrimp and Pernod Ricard, Dalio joined the Marriott family in 2013 as the Director of Restaurants at the iconic JW Marriott Essex House NYC. In 2017, he led one of the largest luxury restaurant operations in the Americas at the JW Marriott Marco Island Beach Resort, receiving the prestigious "America's Restaurateur Of The Year" award from SABRE – Service Awards for Bar and Restaurant Excellence.
In 2019, Dalio joined Pine Cliffs, a Luxury Collection Resort in the south of Portugal, a 72-acre complex with 7 hotel and residential units, positioning it as a culinary reference in the country. Starting in 2022, he assumed the role of Head of F&B at United Hospitality Management, overseeing multiple projects in Portugal and Dubai. This includes over 30 bar and restaurant venues with more than 1000 employees. Currently, he is leveraging expertise to launch a new restaurant group in NYC with Highgate Investment & Management Company.
